What We Had For Dinner

I tried out my new cookbook for this week's recipe, and it was quite the hit. Quick and easy? Well, do you even have to ask if I made it? 



Chicken Provolone


Ingredients:

4 boneless skinless chicken breast halves (4 ounces each)
I used chicken breast fillets. Not sure if it's the same thing, but that's what the grocery store guy said.
1/4 teaspoon pepper
Butter-flavored cooking spray
Pretty sure any cooking spray works. I used canola oil spray.
8 fresh basil leaves
4 thin slices prosciutto or deli ham
I used deli ham.
4 slices provolone cheese

Directions:

1. Sprinkle chicken with pepper. In a large nonstick skillet coated with butter-flavored cooking spray, cook chicken over medium heat for 4-5 minutes on each side or until thermometer reads 170 degrees. 

2. Transfer to an ungreased baking sheet; top with the basil, prosciutto and cheese. 


3. Broil 6-8 in. from the heat for 1-2 minutes, or until cheese is melted. 


The end. See, when I say it's quick and easy, I really mean it. 

Per Serving (1 chicken breast half, recipe yields 4):

I served mine with a side of avocado topped with a dipping sauce. I'm sure I'll share that recipe too at some point, since it was delicious
