What We Had For Dinner

The infamous Cooking Light cookbook had yet another success with last night's dinner. As promised, I'm back to share this recipe:



Feta-Chicken Couscous Salad with Basil

Ingredients:

1 1/4 cups water
2/3 cup uncooked whole wheat couscous
Got mine at Trader Joes for about $1.99. Score.
1 cup diced cooked chicken breast
1/4 cup chopped fresh basil
3 tablespoons capers, rinsed and drained
1 tablespoon extra-virgin olive oil
1 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
2 cups mixed baby salad greens
1/4 cup (1 ounce) crumbled reduced-fat feta cheese

Directions:

1. Bring 1 1/4 cups water to a boil in a medium saucepan. Add couscous, cover and let stand 5 minutes.


2. While couscous stands, combine chicken and next 5 ingredients in a large bowl, tossing gently to coat. 


3. Fluff couscous with a fork. Add couscous, salad greens and cheese to chicken mixture; toss gently to coat. 


And you're done!

Per serving (1 cup, recipe yields 4 servings):

208 Calories
7g Fat
17.2g Protein
20.7g Carbohydrates
2.7g Fiber
33mg Cholesterol
11mg Iron
366mg Sodium
56mg Calcium

I served mine with a yellow squash melt. Easiest thing ever. Cut each squash in half, sprinkle evenly with salt and pop those babies on a grill I used a George Foreman so both sides grilled at the same time. Let the squash cook until they are almost tender, and then sprinkle some Jack cheese on top of each cut side. 45 calories each, and they are seriously delicious!


This meal was loved by all. I know it might be hard to please husbands and children, but pleasing 5 different sets of taste buds, well I'd say that's a major success. You go Cooking Light cookbook!

Cooking Light is awesome, isn't it? I've ever used the cookbook but I'm on their site all the time.
